The Appliance That Doesn’t Get Enough Attention
The range hood is among the most performance-variable kitchen appliances and among those most often selected based on appearance rather than function. A range hood that looks beautiful but doesn’t capture cooking vapors effectively is an expensive decoration; one that captures vapors effectively but is too loud to use comfortably gets turned off during the cooking it was meant to address. The intersection of adequate performance and acceptable noise is the specification that most homeowners don’t know how to find.
Understanding what the specifications mean — CFM (cubic feet per minute of air moved), sone ratings for noise, and duct size — allows range hood selection based on function rather than on appearance and price alone.
CFM: How Much Ventilation Your Cooking Style Requires
The standard residential range hood sizing formula: for a gas range, multiply the total BTU output of all burners by 100 to get the minimum CFM required. A typical 4-burner gas range with 60,000 total BTU requires a minimum 600 CFM hood. For an electric range, the standard recommendation is 100 CFM per linear foot of range width — a 30-inch electric range needs a minimum 300 CFM hood.
These are minimums for average cooking. Households that regularly cook with high heat (stir frying, searing, frying) or with strongly aromatic foods benefit from higher CFM — 600–900 CFM for intensive gas cooking, 400–600 CFM for intensive electric cooking. The higher the CFM, the more completely the hood captures cooking vapors before they disperse into the kitchen air.
Sone Ratings: The Noise Variable That Affects Whether You Use the Hood
Sone ratings measure the perceived loudness of the range hood at its maximum fan speed. A hood rated at 4 sones is roughly as loud as a moderately quiet office environment; one rated at 1 sone is nearly silent. Most residential range hoods fall between 2–6 sones at maximum speed, with professional-grade and high-performance hoods typically at the lower end of this range despite higher CFM outputs.
The practical implication: a hood that’s too loud encourages users to run it at lower speeds (reducing effective capture) or to skip running it altogether. The noise-to-performance trade-off is real — look for hoods that provide the required CFM at acceptable sone levels rather than selecting on CFM alone. High-quality hoods from Broan, Zephyr, and similar manufacturers provide better noise-to-performance ratios than budget alternatives at equivalent CFM.
Ducted vs. Ductless: The Performance Difference
Ducted range hoods (connected to a duct that exhausts air to the exterior) remove cooking vapors, combustion byproducts, moisture, and odors from the kitchen. Ductless hoods (recirculating systems that filter air through charcoal and return it to the kitchen) remove some particulate and reduce cooking odors but don’t remove moisture or combustion byproducts — they filter and recirculate rather than exhaust.
For gas cooking and for any cooking where indoor air quality is a priority, ducted ventilation is clearly superior. Ductless hoods are appropriate only where duct installation is genuinely impractical (an island hood in a house without an attic above, for example) — they provide some odor and particulate filtering but don’t address the combustion byproduct concerns associated with gas cooking that a ducted system eliminates.
Duct Size and the Hood Performance Gap
A range hood performs at its rated CFM only when the duct it’s connected to is sized to pass that air volume without excessive resistance. A 600 CFM hood connected to a 4-inch duct (whose maximum flow capacity is approximately 300 CFM) will never move more than 300 CFM regardless of its fan speed rating. The duct is the bottleneck, not the fan.
The standard sizing: 6-inch round duct for up to 400 CFM, 7-inch for up to 600 CFM, 8-inch for up to 900 CFM. Rectangular duct equivalents exist with the same capacity guidelines. Any bends or elbows in the duct run reduce effective capacity — add 50 CFM to the hood rating for each 90-degree elbow in the duct run when sizing the duct. This sizing guidance prevents the common situation of installing a powerful hood and discovering it performs no better than the budget hood it replaced because the duct wasn’t sized for the new capacity.
